Skillet Tomato Chicken Breast Dinner

I can’t tell you how many times I’ve gotten chicken breast out of the freezer to thaw for dinner and had no idea what I was going to make with them. And sometimes, I don’t even have an idea of what I’m going to make with them until it’s pretty much time to start cooking. Organized? No. Do I make meal plans…huh. I should but half of the time I wing it.
Whether your an organized cook (I wish I was like you) or you like your meals planned out in advance your going to love the ease, simplicity and downright awesome flavor of Skillet Tomato Chicken Breast Dinner. This recipe is chicken breast with tomatoes- and it does not disappoint!
The steps to making this chicken breast with tomatoes a skillet classic:
We start this bad boy out by sautéing whole boneless chicken breast in olive oil until they’re nice and golden brown on both sides. Our next step is to remove them from the pan to a plate so we can “deglaze” the pan. If you’ve never deglazed a pan before it’s simple. For this recipe, I used 1/2 cup of white cooking wine, if your not into cooking with wine you could use chicken broth in its place.
After the chicken breasts are removed from the pan, pour the cooking wine (or chicken broth) into the saute pan. Using a spatula, scrape the bottom of the pan as it cooks to get all the delicious bits up from sautéing the chicken breasts.
All the juices and bits on the bottom of the pan will add flavor to the dish. After you deglaze the pan, add the onions, chicken broth, tomatoes, garlic powder, and sugar. Simmer for 10 minutes, then add the chicken breasts back into the pan to simmer another 15 minutes or so till the breast are cooked through.
Didn’t I tell you this was going to be easy? And wait till you taste it!! Serve with the side dish of your choice, Parmesan Risotto would be amazing or hey, good ole mashed potatoes works too! My mother-in-law used to serve her chili over mashed potatoes, you wouldn’t in a million years believe how good it was!

Ingredients
- 4 whole boneless chicken breasts
- one 28 ounce can diced tomatoes
- 1 cup chicken broth
- 1 onion , diced
- 1/2 cup white cooking wine (use chicken broth in place of the wine if you prefer)
- 1 Teaspoon garlic powder
- 1 Tablespoon olive oil
- salt and pepper
- 1 Tablespoon white sugar
Instructions
Salt and pepper both sides of the chicken breasts. Place the olive oil in a large saute pan. Saute the chicken breast until golden brown on both sides. Remove the chicken breasts from the pan to a plate.
Add the white cooking wine to the pan and deglaze it. Add the onions, chicken broth, tomatoes,garlic powder, and sugar to the pan. Simmer for 10 minutes. Place the chicken breasts back into the pan, spoon the tomatoes on top of the breasts, simmer for 15 minutes or until chicken is cooked through. Serve immediately.

My family would love this for dinner. I don’t cook a lot of Italian dishes, but I think I could handle this one!

It is nice to be able to make a tasty chicken dinner with something a little different, with a bit more flavour. This sounds like a delicious meal, and ideal for the family for any day of the week. With store cupboard ingredients it would be easy to make.
