One-Pot Creamy Tomato Tortellini Soup Recipe -The EASIEST homemade creamy tomato tortellini soup made from scratch! Loaded with fresh herbs, diced tomatoes, and three-cheese tortellini! So easy you can even make it in your slow cooker!

Sometimes I think it's still soup season, and then the weather decides it was to be on the warmer side again when I make a pot of soup. It's so hard to predict how it's going to be because mother nature is constantly changing. Ugh!

Oh well. My hubby is still going to enjoy this one pot creamy tomato tortellini soup! Even though I would like to face plant into a bowl of this soup, I am going to have to pass because I am dieting. My willpower is starting to get stronger each and every day. I would LOVE a big bowl of this soup with a buttered and toasted slice of bread! I did taste it now and then when I was making it, so I know it's delicious.

20-Minute Tuscan Chicken with Penne Pasta

If you love one-pot soups, you are going to LOVE one-pot tomato and basil tortellini soupor my one-pot creamy sausage and potato soup!

I immediately know what ingredients I wanted to use to resemble a condensed tomato soup: springs of fresh rosemary, fresh basil, dried oregano, and dried thyme. Yep. Those are your typical Italian soup and sauce basic. Not to worry if you do not have fresh rosemary or basil, you can find the measurements for dried.

Every soup or pasta dish I make I love to use my dutch oven. If you do not own one, it is my most used kitchen pot. It keeps things an even cooking temperature since it is made out of cast iron and perfect for throwing into the oven. Hands down...the BEST!!

If you do not make your chicken stock from scratch, I highly recommend this brand of chicken stock. I always like to get the unsalted kind because I like to add salt to my taste.

Ingredients

  • 1medium onion,diced
  • 3garlic cloves, minced
  • 1tspolive oil
  • 1spring of fresh rosemary chopped or ½ teaspoon dried
  • 28ozcan diced tomatoes
  • 15ozcan tomato sauce
  • ½tspdried oregano
  • 4large fresh basil leaves or ½ teaspoon dried basil
  • ½tspsalt
  • ¼tsppepper
  • 4cupschicken stock
  • ½cupheavy cream
  • 20ozthree-cheese tortellini
  • ½cupshredded parmesan cheese + extra for garnish
  • fresh basil,to garnish
  • shredded parmesan cheese, to garnish

Instructions

  1. Place the onion, garlic, and olive oil, and fresh rosemary in a 6-quart soup pot or dutch oven. Sautee over medium heat for 5 minutes or until the onions are translucent.

  2. Add in the diced tomatoes, tomato sauce, oregano, basil, salt, pepper, chicken stock, and heavy cream and stir to combine. Simmer for 20 minutes.

  3. Place the three-cheese tortellini into the soup and cook for 12-15 minutes or until the tortellini are tender and cooked through.

  4. Stir in the parmesan cheese.

  5. Serve and garnish with fresh basil and shredded parmesan cheese.

      Great question, Camille. I would recommend not thawing the tortellini and adding it at the same time as the refrigerated tortellini. It may take a few minutes to cook.

      The tortellini does absorb some of the liquid, but it shouldn't absorb it all. I notice if there are leftovers that most of the liquid is absorbed the next day. I haven't had a problem with it after it was finished cooking, though!

    Rarely do I make something that *everyone* in my family adores, but this did it! It was so good. I can attest that crushed tomatoes work just fine. I did start off by cooking two sweet Italian turkey sausages, without casings, and then chopping them finely and adding them with the tomatoes. I don't think the recipe needed it, but it pushed it over the top. This is delicious. A keeper! Thank you.

    This is an amazing recipe! I love tomato soups and sauces but have never made my own. It is so delicious! And for anyone reading the comments, I used whole canned tomatoes and just sort of "smooshed" them as they cooked and there were no pieces of tomato in my soup. It was just a nice, smooth, delicious, mildly creamy tomato soup with tortellini, I did also have a problem with the tortellini absorbing too much of the soup but I had turned my back on it and it had boiled. No boiling next time (and there will be a next time!) and I may use half to two thirds of a package of tortellini. It'll still have that tomatoey goodness and there will be plenty of tortellini to go around.

    This turned out very tasty! I didn't change the recipe at all when I made it. But I'd suggest using less tortellini and (separate suggestion) cooking it for half as long. There was so much tortellini in this, the ratio to soup was way off. It wasn't really soup anymore.

    This was an amazing recipe ! I used dry tortellini from Trader Joe’s and I had to add extra water so it would cook through. But I would think a package of tortellini from the cold case at the grocery store wouldn’t need extra water.
    I also added zucchini near the end and it was delicious.
    Thanks for such a great recipe. The family loved it- even my picky 4 year old ate all of her helping.

    This is such a delicious and satisfying soup and so easy to put together with pantry staples. The first time I made it as written. So good! Last night I made a few subs based on what I had on hand and also so good! I used 16oz frozen tricolor cheese tortellini and, since I didn't have heavy cream and had a partially used can of coconut milk open, used coconut milk instead of the cream. I was wanting super creaminess and also had half a block of cream cheese lying around so I added that in too. I don't like to add parm to the pot because it just sticks to the pot so I usually sprinkle it on top once it's in the bowls, but last night I forgot and maybe because of the cream cheese didn't miss it at all. All versions of this now on regular rotation. Thanks!

Was trying to use up veggies so I added chopped celery, mushrooms, green pepper and baby spinach. I used 3 cups of tortellini which was half of my 750 gram package. Easy and delicious!     I made this exactly as-is. Personally, I loved it as I knew I would. I was quite surprised to see my kids and husband liked it as well (they have particularly boring taste).     This is a keeper! I did double the recipe. I used both crushed & diced tomatoes that I ran thru my chopper. I ened up having to use 2c beef broth + 6c chicken because I ran out, couldn't tell difference. I did add the sausage & spinach, cooked day before added w tomatoes. Added the cream near end simmered 5 min then the tortellini. Topped w shredded parm & served w cheesy garlic bread. Family ♡ sending leftovers to coworkers

    Awesome recipe! I used 2 28-oz cans of diced tomatoes and 1 24-oz jar of spaghetti sauce since that was what I had on hand. I swapped Greek yogurt for the heavy cream and pecorino romano cheese for the parmesan. I also added extra pasta (personal preference). So delicious!
