Directions

1.To make the zucchini tomato Italian sausage soup: In a large pot or large Dutch oven, heat the olive oil over medium-high heat. Add Italian sausage meat and cook, breaking up the meat with a wooden spoon, until browned – approx. 5 minutes.

2. Once the Italian sausage meat has browned, add onion, celery, and bell pepper and sauté for four minutes.

3. Move the meat and vegetables to the sides and lower the heat to medium (If your pot isn’t large enough, remove the meat and veggies to a salad bowl, you’ll add them back afterward). Add garlic, pepper flakes, and tomato paste to the center of the Dutch oven and cook for two minutes, stirring occasionally.

4. Add tomatoes, zucchini, pepper, chicken broth, Parmesan rind, and Parmesan cheese along with fresh basil and fresh thyme and stir well to combine.

5. Bring the soup to a simmer and cook covered until the vegetables are tender – about 10 to 15 minutes.

6. Remove the soup from heat and take out the Parmesan rinds. Serve the zucchini tomato Italian sausage soup immediately with more fresh basil and Parmesan cheese on top. Enjoy!

    I've made this soup a bunch of times, and it's very forgiving. My most common swap is using a mix of mild and hot sausage, and sometimes canned tomatoes if I don't have fresh. My pantry friendly version is to use canned tomatoes, dry thyme, and dried basil. Honestly I think it's fine without fresh basil unless you specifically love that flavor. I do try to always have a Parmesan rind on hand for it, but I've made it without cheese and it was still very good. I usually skip the shredded Parmesan, and sometimes I'll add some short noodles to the soup if I feel like making it more stew-like, but it's great without (especially with a side of crusty bread).

    Great recipe. I used ground turkey instead of Italian sausage and added a can of black beans and a can of Rotel. Other than that, followed the recipe.

    Love this recipe and have made it many times. No way does it only take 30 minutes, if you include the time to chop all of the vegetables. More like 2 hours. Worth it though.

    This was wonderful! Used spicy Italian instead of sweet and left out the red pepper. Threw in a few handfuls of Kale I needed to use up. Hubby had two servings which says a lot! I can wait for lunch tomorrow too have some more!

    I made this tonight, it's yummy.I loved reading the reviews, seeing how easy it seems you can adapt and tweak it to what you have in the house or your situation, etc.I gave it four stars because my criteria when it comes to recipes is, it has to be quick and easy prep. I prefer the recipe be completed in half an hour. However, I'm okay if longer cooking is required, as long as the prep is fairly quick. The prep time listed for this recipe is 10 minutes and cook time 25 minutes. It took me almost 25 minutes to prep the vegetables, wash them, peel them, cut them, etc. and, I used my food processor! I don't think (unless you are a world-class chef) this recipe can be prepped in 10 minutes.Otherwise, nice soup. I served it with a large Italian salad, ciabatta bread,Bartenura Rosso Toscano wine and a Flora Torta Custard Cake for dessert .

    This is quite delicious! It freezes well also. I made a few small tweaks. My red pepper only produced 1 cup diced so I added 1 cup diced carrots. I also only had 8 oz of sausage which turned out to be plenty. I added 2 cans of great northern beans as a replacement for the missing meat. Provided great texture. I did use the parm rind but did not add the shredded parm during cooking, instead added to each serving. I found a can of V8 in my pantry so on a whim I decided to add 1 cup, reducing the broth from 8 to 7 cups. Last, I added a few handfuls of fresh spinach at the end. Overall, great recipe and easy to adapt to what is available. Definitely will make again.

    I modified it only slightly by using only crushed tomatoes and not cut-up ones to cut down on acid and I also have done this in the crock pot several times depending on how much time I have. No matter how I prepared it has come out great. Agree on holding off on crushed red pepper until each person wants to add to their own bowl. I like it spicy, but found others prefer more mild taste. Great cool weather dinner!

    Although I am sure original recipe would be amazing, I used this as a base recipe for items I had on hand. I used ground hot sausage, a large yellow squash, half a bag of frozen mixed vegetables, chopped red onion, 3 garlic cloves, Italian seasoning, oregano, garlic, and onion powders, jar of crushed tomatoes plus a fresh tomato cut up, and 4 cups of vegetable broth. Very hearty and delicious!

    Great dish, I accidently put the shakes of red pepper flakes and it came out spicy but good. Kids couldn't really it. So next time leave it out and add it to our dish.

    This is one of my favorite recipes now. My only critique is the servings number on the recipe - I feel like like this could feed an army lol. Seems easily more than 8 servings. I don’t get tired of it. I ate it for breakfast lunch and dinner yesterday.

    I have made this three times already. The last time I used italian sausage links both sweet and hot and it was great. Baked the sausage in the oven first and then sliced it up for the soup. Worked out great.

    This soup was really good! My vegetables (red pepper, zucchini, tomatoes) got very mushy, so definitely need to adjust some cooking times there but flavor was delicious!
