These Almond Roca Bars are soft, almond flavored cookie bars topped with rich chocolate and almonds.
ALMOND ROCA BARS
I’ve been obsessed over chocolate lately.More thannormal. There is some force of nature drawing me to anythingchocolate. My husband and I were at Burger-Fi on a dateand as wesat down I said, “I smell chocolate.”In a burger jointthe smell seemed out of placebut sure enough WAY across the room a boy was unwrapping a chocolate bar.
I swear this nose of mine is my downfall. I have an insane sense of smell that gets me in trouble.
Which leads to me these Almond Roca Bars. I first spotted them at The Food Charlatan. Her picture got me. Check it out. It’s been taunting me ever since I saw it. Then I saw her Nutella Stuffed Browned Butter Blondies and licked my computer screen. Which actually might have some residual chocolate on it so it wasn’t completely in vain.
I know some people don’t like almond flavoring. We might have to reevaluate our friendships if that’s the case. The dough for these bars taste just like sugar cookie dough with a strong almond flavor. The bars are soft, buttery and topped with chocolate and sliced almonds. With just a few ingredients, I had these in the oven in under 5 minutes. I only put almonds on half of the pan because the kids aren’t crazy about nuts.
I think I may have been a littlezealous in sprinkling chocolate chips on top. I used semi-sweet but I really love the taste of milk chocolate chips too. You can definitely use more or less depending on your PMS level…I mean…preference.

Almond Roca Bars

These Almond Roca Bars are soft, almond flavored cookie bars topped with rich chocolate and almonds.

Servings: 16 servings
Ingredients
- 1 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon almond extract
- 1/4 teaspoon salt
- 2 cups flour
- 1/2 cup sliced almonds
- 1 1/2 cups semi-sweet or milk chocolate chips
Instructions
Preheat oven to 350 degrees and grease a 9x13 baking dish. In a large bowl, beat the butter with the white and brown sugar until fluffy. Add egg, almond extract, and salt and mix until combined. Add the flour and mix thoroughly. Spread mixture into the prepared pan.
Bake for 13-15 minutes or until edges are golden brown. Sprinkle bars generously with chocolate chips immediately after baking and let them sit to melt. You can stick the pan back into the oven for a couple of minutes to speed this up. Once chips have melted, spread the chocolate evenly on top and sprinkle with sliced almonds.

Been looking for a similar recipe that my Mom who has passed made. I think this is very close, except she used plain Hershey bars melted on top, instead of chocolate chips. I’m going to try that replacement. really happy to find this though. thanks

I have my mom’s recipe that uses Hersey bars. Cream together:
1/2 c brown sugar
1/2 c white sugar
1 c butter
Beat 1 egg yolk
1 teas vanilla
2 c shifted flour
Spread on cookie sheet with sides, bake 350° 15-20 min
Large Hersey bar 2-3 reg size, melt in double boiler, spread on warm crust, sprinkle on crushed sliced almonds, cut into squares while warm

Just tried making this recipe. How do you get the chocolate chips to melt and spread out? I sprinkled the chocolate chips evenly immediately after taking it out of the oven. I let it sit but it was not melting. So I placed it back in the oven and waited a few minutes. When i friend to spread the chocolate chips it just stuck together forming a clump. Could it be the brand of chocolate chips I used? I used Nestle roll house semi- sweet.

Shoot that sounds wrong. I’ve used that method many times. If it just clumps that usually means your heat was too high

I haven’t made these yet but have to give them a rating and in my mind, this should definitely be a 5! If it is half as good as it sounds it must rate a 5! OK, my almond roca story. I LOVE almond roca. Whenever I had a baby, my “reward” was a can of almond roca! Real incentive to have babies, you know! Well, I haven’t had any babies since 1976-I had 4 babies, total! N0 almond roca! Well, OK, I have probably gotten two or three cans in that entire time…for me. My husband doesn’t really like almond roca (major malfunction, I know, but hey, leaves more for me! : ) So, now I have a recipe for almond roca! I think I might make some every day. I am trying to lose weight! Your recipes aren’t helping at all! Hah, hah, hah! I hope he doesn’t like them. Then, I can eat it all by myself! Yippee! I know it is an evil thought but, hey, what can I say?
